Once again I forgot to plan what to have for supper tonight… I really need to start making a weekly menu. So, I got home and looked in the fridge for anything that is thawed that we can eat. Canned fruit? John probably wouldn’t go for that. Lunchmeat? Hmm, I had a sandwich for lunch. Taco meat? Perhaps. Biscuits? Ohh, I have an amazing idea! So, I grabbed the can of biscuits, taco meat, and some shredded cheese for good measure.
I grabbed a rolling pin and cutting board out of the cabinet and began to work. I popped them in the oven, cut up a quick salad while they were baking. Then they were ready.
I was nervous about if John would like these or not. He loved them! He said they tasted like fried tacos at a restaurant.
Here’s the recipe… Caution, it’s very hard to make. 🙂
1 package reduced fat can biscuits (we call them whop biscuits)
leftover taco meat (I used 12 spoonfuls)
low fat shredded cheddar cheese (I used 24 pinches)
Roll a biscuit flat, then put 1 pinch of cheese on half of the biscuit. Place a spoonful of taco meat on top of that, then top with another pinch of cheese. Fold the biscuit over being careful to completely seal the edges. Repeat with remaining biscuits. Prick the Bake for time and temperature specified on the biscuit can. Mine was 400 degrees for 15 minutes.
These are also relatively healthy. We estimated them being 3 WW points each.
These can easily be filled with any filling combination. If you experiment with them let me know!

I might have to try these to use up some browned beef I have in the fridge. It’s just different enough that B will probably love them.
